ragi roti recipe | ragi rotti | nachni roti | finger millet roti with step by step photo and video recipe. rotti recipes are very common across india, but millet based recipes are hugely popular with south indian. it is generally served for morning breakfast, but can be served for any meal. one such hugely popular and healthy south indian breakfast recipe is ragi roti recipe known for its taste and flavour.

millet based recipes are very common for our day to day breakfast. we generally make idli or dosa for weekend breakfast, but millet based recipes or even akki roti for weekdays breakfast. these are healthy but more importantly quick and easy to make in no time. moreover, last week i had shared 2 ways of making akki roti, and i got many requests to post ragi rotti recipe. my previous post of finger millet roti was very old anyway, hence i thought of posting it 2 ways – one patting the roti on tawa and the other with the help of banana leaves. i personally prefer to do the latter one, but some prepare to make these roti’s in tawa too. hence i thought of sharing both the recipe.

furthermore, before concluding some tips, suggestions and variations to ragi roti recipe. firstly, the dough has to be soft and easy to spread on any even surface. hence if your dough is hard and cannot be spread, you can sprinkle some water to make it moist and soft. secondly, i personally recommend using banana leaf to tap and spread the roti. you may use baking paper, silver foil and even cling wrap for the same purpose. also, attempt the tawa based approach if you have 2 tawa, so that it can be used alternatively. lastly, the ragi roti is spiced with herbs and onions, hence you do not require any condiments specifically. yet you may very well serve it with choice of coconut chutney, or any chutney powder.

Ingredients

  • 2 cup ragi flour / finger millet flour / nachni atta
  • 1 onion, finely chopped
  • 1 tsp ginger paste
  • 1 chilli, finely chopped
  • few curry leaves, chopped
  • 5 tbsp methi / fenugreek leaves, chopped
  • 2 tbsp coriander, finely chopped
  • 1 tsp cumin / jeera
  • 1 tsp salt
  • ¾ cup hot water
  • oil, for greasing and roasting

Instructions

  • firstly, in a large bowl take 2 cup ragi flour.

  • add1 onion, 1 tsp ginger paste, 1 chilli, few curry leaves, 5 tbsp methi and 2 tbsp coriander.

  • also, add 1 tsp cumin, 1 tsp salt and mix well.

  • now add¾ cup hot water and combine well.

  • further, add 1 tsp oil and knead for a minute.

  • knead to a smooth and soft dough. add water if required to make a soft dough.

to prepare on banana leaf:

  • to prepare ragi rotti on banana leaf, grease the banana leaf. if the banana leaf is not tender, heat slightly and then grease with oil.

  • take a ball sized dough and tap gently to a thin thickness.

  • make 3 holes, this will help to roast as we can add oil in the centre.

  • now flip over to hot tawa and press gently.

  • after a minute, peel the banana leaf gently.

  • flip over once the base is cooked.

  • now add oil and roast both sides until it turns slightly golden.

to prepare on tawa:

  • grease the heavy-bottomed tawa with 1 tsp oil.

  • take ball sized dough and tap gently to a thin thickness.

  • place the tawa on medium flame.

  • cook on both sides adding a tsp of oil until it turns golden brown.

  • finally, enjoyragi rotti with butter and spicy chutney.
